One of my favorite things that comes with the warmer weather is the abundance of locally grown fresh fruits and veggies that seem to suddenly become available (and usually at a decent price)! And what better way to celebrate amazing, fresh produce than to cook soup?!
In my world soup is pretty much the best type of food there is, simply because there are an endless number of possible creations to make, even with the same handful of ingredients. Since I am so fond of soup it is something that gets eaten year-round (actually, almost daily), at any meal, hot or cold!
Yes, I said cold, and I'm sure that some of you out there just cringed a little, but hey, have some faith, cold soups are better than you think; They are quick, easy, nutritous, delicious, and as an added bonus they dont heat up the house on an already hot day!
Hot soups are a classic, and are the perfect comfort food for a cool summers night. And for all of you who are still feeling a little freaked out by the idea of cold soups, relax nothing about these soups will push you outside that good old comfort zone.
